Its Thursday! So that means its another day for the blog! this week we are making a Victoria sponge sandwich, its a classic and honestly I find some of the more simple desserts my favourite!

Better than mams Victoria Sponge Cake

Ingredients

  • 300g unsalted butter

     

  • 300g caster sugar

  • 6 medium eggs

     

  • 300g self-raising flour

     

  • 1 tsp baking powder

  • 2 tsps vanilla extract

Method

  • Preheat the oven to 180 degrees Celsius and line two 20cm/8-inch round cake tins with parchment paper.

  • In a mixing bowl, beat the butter and sugar together until light and creamy.

  • Add the eggs, self-raising flour, baking powder, and vanilla extract. Mix together until well combined.

  • Split the cake mixture between the prepared cake tins and bake for approximately 35 minutes, or until the cakes turn golden and a skewer inserted into the center comes out clean.

    Allow the cakes to cool completely before proceeding.

  • Once the cakes have cooled, spread the strawberry jam evenly over the surface of one cake layer.

  • In a separate bowl, whip the cream

    add the icing sugar, and vanilla extract to your cream. Whip until soft peaks form.

  • Spread the whipped cream mixture over the jam layer.

  • Carefully place the second cake layer on top of the cream filling.

  • Lightly dust the top of the cake with icing sugar.

  • Now, your delicious cake is ready to be enjoyed
