
Its Thursday! So that means its another day for the blog! this week we are making a Victoria sponge sandwich, its a classic and honestly I find some of the more simple desserts my favourite!
Better than mams Victoria Sponge Cake

300g unsalted butter
300g caster sugar
6 medium eggs
300g self-raising flour
1 tsp baking powder
2 tsps vanilla extract
Method
Preheat the oven to 180 degrees Celsius and line two 20cm/8-inch round cake tins with parchment paper.
In a mixing bowl, beat the butter and sugar together until light and creamy.
Add the eggs, self-raising flour, baking powder, and vanilla extract. Mix together until well combined.
Split the cake mixture between the prepared cake tins and bake for approximately 35 minutes, or until the cakes turn golden and a skewer inserted into the center comes out clean.
Allow the cakes to cool completely before proceeding.
Once the cakes have cooled, spread the strawberry jam evenly over the surface of one cake layer.
In a separate bowl, whip the cream
add the icing sugar, and vanilla extract to your cream. Whip until soft peaks form.
Spread the whipped cream mixture over the jam layer.
Carefully place the second cake layer on top of the cream filling.
Lightly dust the top of the cake with icing sugar.
Now, your delicious cake is ready to be enjoyed
