Better Than Mams Victoria Sponge Cake

Its Thursday! So that means its another day for the blog! this week we are making a Victoria sponge sandwich, its a classic and honestly I find some of the more simple desserts my favourite!

Ingredients:

Β For the Cake:
- 300g unsalted butter
- 300g caster sugar
- 6 medium eggs
- 300g self-raising flour
- 1 tsp baking powder
- 2 tsps vanilla extract

For the Filling:
- 250g strawberry jam
- 300ml double cream
- 1 tbsp icing sugar
- 1 tsp vanilla extract
- Icing sugar for dusting


Method:Β
Cake:
- Preheat the oven to 180 degrees Celsius and line two 20cm/8-inch round cake tins with parchment paper.
- In a mixing bowl, beat the butter and sugar together until light and creamy.
- Add the eggs, self-raising flour, baking powder, and vanilla extract. Mix together until well combined.
- Split the cake mixture between the prepared cake tins and bake for approximately 35 minutes, or until the cakes turn golden and a skewer inserted into the center comes out clean.
- Allow the cakes to cool completely before proceeding.

Filling:
- Once the cakes have cooled, spread the strawberry jam evenly over the surface of one cake layer.
- In a separate bowl, whip the cream
- add theicing sugar, and vanilla extract to your cream. Whip until soft peaks form.
- Spread the whipped cream mixture over the jam layer.
- Carefully place the second cake layer on top of the cream filling.
- Lightly dust the top of the cake with icing sugar.
- Now, your delicious cake is ready to be enjoyed
